Tasting Notes
Day one: Slate spice, herbs, lemongrass, also white, fragrant peach, taut and very concentrated in the mouth, dense, steely acidity, hardly sweet despite 30 grams of residual sugar, immense minerality, dense, long, still very young. Day two: balsamic and yellow-fruity, lots of citrus fruit, the terroir less isolated from the fruit. In the mouth this has a highly concentrated form of lightness, intense tactile minerality, still seems completely undeveloped, perhaps a little sweeter than yesterday. Day three: incredibly complex on the nose, herbs, blood orange, cedar lemon, slate. The palate structure has become an amalgam: an almost late-harvest-like smoothness is added today, accompanied by juicy acidity, round and softened phenols, lots of play.
