Fine smoke and savouriness from ageing in 500-litre wooden barrels, fine caraway, roasted sesame, pear and apple peel, also dried hay, slightly reductive. Builds up good tension and substance on the palate with a ripe, phenolic structure, salty, quite vivid acidity and minerality, chalky, the extract feeds into the long finish. Some crushed mustard seed, salted lemon.
