The spontaneous fermentation determines the aroma: yeast, herbs, apple peel, malt, also kimchi, some caraway, apricot in the background. Not a blender on the palate, brings its strengths to bear with understatement, texture, juice, cultivated phenolics, energetic peaks that sit.
