CODA Moves to Copenhagen: René Frank Brings His Boundary-Breaking Cuisine to Tivoli Gardens
After a decade of redefining the relationship between pastry and fine dining, René Frank is bringing CODA's innovative culinary philosophy to Copenhagen.
From July 16 to August 16, the two-Michelin-starred restaurant will take over the Japanese Pagoda at Copenhagen’s Tivoli Gardens as the iconic venue celebrates its 10th anniversary. For one month, guests will have the rare opportunity to experience CODA’s progressive culinary philosophy outside its Neukölln home.
Widely regarded as one of the world’s most innovative pastry chefs, Frank has built CODA around a simple idea: there is no meaningful distinction between sweet and savoury. Instead, fermentation, texture, temperature and time become tools to unlock flavour in its purest form. Sugar takes a back seat to umami, acidity and natural sweetness, while ingredients such as cheese, bone marrow, chicken skin, sobrasada or caviar are explored with the same precision usually reserved for chocolate or fruit.
The result is a cuisine that refuses categorisation. Signature creations range from beetroot gummy bears and Gouda-filled brioche doughnuts to raclette waffles served with fermented kimchi yoghurt and Champagne—dishes that blur the lines between pastry, kitchen and fine dining.
Set within Tivoli’s historic gardens, the residency places CODA in dialogue with one of the world’s most influential culinary destinations. For Copenhagen, it is an invitation to experience one of Europe’s most original dining concepts; for René Frank and his team, it marks an exciting new chapter as CODA celebrates ten years of culinary innovation.
