Cook the Mountain: Norbert Niederkofler brings sustainable alpine cuisine to Aspen
Legendary northern Italian chef Norbert Niederkofler's pop-up concept will showcase his visionary sustainable philosophy at the Jerome hotel from January 8 to 11, 2025.
The gourmet pop-up Atelier Norbert Niederkofler Temporary is returning to Aspen for an exclusive winter edition. In collaboration with the Jerome hotel, a luxury resort in the Auberge Resorts Collection, top Italian chef Norbert Niederkofler will be showcasing his "Cook the Mountain" philosophy from January 8 to 11, 2025.
The concept, which epitomizes Niederkofler's focus on regional ingredients, local traditions and sustainability, will be hosted by the hotel's Prospect restaurant. Guests can look forward to a special menu, a masterclass and insights into Niederkofler's signature fusion of tradition and innovation.
The chef from the Italian Dolomites received international acclaim for his restaurant Atelier Moessmer Norbert Niederkofler in Bruneck, which was awarded three Michelin stars and a green star for sustainability just a few months after opening in July 2023. Located in the historic premises of the former Moessmer textile factory, the culinary studio is a paragon of Niederkofler's philosophy of "Cook the Mountain": ingredients from the surrounding peaks, short supply chains, seasonal products, and the respectful use of natural resources.
