Stureplan in Stockholm is more than just a square – it is a symbol of wealth, momentum, and status. For decades, its dense concentration of nightclubs, restaurants, and bars has formed the epicenter of the city’s nightlife. Against this backdrop, it is almost surprising that a restaurant like Sperling has not existed here long before now.
Sperling is a modern grill and steakhouse that offers an elegant, meat-focused dining experience with a lively atmosphere, an ambitious wine list, and a clearly trend-conscious identity.
The interior combines wood and leather with custom-designed details, creating a refined and sophisticated ambiance. At the heart of the dining room stands a large open kitchen, adding a theatrical quality to the experience – the heat from the grill and the constant movement shaping the pulse of the room.
Chef Michael Andersson is both the face and creative force behind Sperling. Named Chef of the Year in 2024, he previously held a leading position at the one-starred Celeste in Stockholm.
Among the starters are lobster carpaccio with shellfish emulsion, potato strings, and pickled red jalapeño; a warm crab and lobster salad; and the restaurant’s oyster plateau – the clear standout thanks to its clean and precise flavors. Overall, however, the opening dishes can occasionally feel overly elaborate, both in flavor composition and presentation.
The true highlight of the menu is the meat. Swedish grass-fed entrecôte and fallow deer topside are prepared with precision and deep respect for the ingredients. The side dishes – including classic béarnaise sauce and crisp beef-fat fries – are equally successful.
