Herzog von Rohan riet den Bündnern um 1635, anstelle des minderwertigen Weissweins den edlen Burgunder zu pflanzen. Er war überzeugt, dieser könne im hiesigen Boden und Klima gut gedeihen. Der Erfolg gab ihm Recht. Um 1646 wurde auf Schloss Salenegg der erste Blauburgunder gepflanzt. Seit 1850 sind 90% der Rebfläche von Schloss Salenegg mit Pinot Noir bestockt. Um über Jahrhunderte Bestand zu haben, braucht es neben hervorragenden Reblagen auch eine glückliche Hand im Keller – und den Respekt vor der Tradition. Nur so konnte der Traditionell über all die Jahre seinen Charakter bewahren und seiner Herkunft und seinem Wesen treu bleiben. Noch heute reift der Traditionell in den grossen Eichenfudern (1’800 – 3’600 Liter). Während dieser Reifezeit erhält er seinen einzigartigen Schmelz, die seidenweichen Tannine und seine unverwechselbare Aromatik. Delicate cherry red. Notes of sour cherry, with a delicate spiciness of white pepper in the background, dried herbs and some smoked bacon. Shows grip and beautiful length on the palate, chalky, perfectly integrated tannins. A very elegant, classic Pinot.
