Direkt hinter Schloss Salenegg reifen die Chardonnay-Trauben. Vollreif werden sie frühmorgens noch kühl geerntet. Minuten nach der Ernte werden die Trauben schonend abgepresst. Der erste Saft fliesst direkt ins Französische Barrique. Nach der Gärung liegt der Chardonnay noch weitere neun Monate auf der Hefe im Barrique. Von Zeit zu Zeit wird eine Bâtonnage durchgeführt, um die zurückhaltenden Holznoten dezent im Wein zu integrieren. In der Nase überraschen Mineralität, Feuerstein, Zitrus und grünen Äpfeln, wobei das Holz sehr dezent wahrnehmbar ist. Im Gaumen bestätigt sich der erste Eindruck, mineralisch filigran, mit leichter Salzigkeit. Sein Finale ist ein unendlich lang anhaltender Abgang, kurz: ein feiner mineralischer Chardonnay nach Burgunder Vorbild mit Lagerpotenzial.

Ripe, clear fruit aromas on the nose. Notes of mango, apricot and apple as well as citrus. On the palate, oscillating between power and elegance, ripe acidity, salty-mineral finish.
