Im Dessertwein «Le Soleil d’Ulysse» sind zwei Kunsthandwerke vereint, die auf Schloss Salenegg seit Jahrhunderten gepflegt werden: die Kelterung von Pinot Noir und die Destillation von Alkohol im holzbefeuerten Brennhafen. Eine Selektion vollreifer Pinot Noir-Trauben wird im grossen Gärbottich auf der Maische angegoren und mit hauseigenem Weinbrand bei ca. 68° Oechsle unterbrochen. So ergibt sich die Restsüsse für den samtigen, eleganten Dessertwein. Anschliessend ist Geduld gefragt, vier Jahre reift der Dessertweit in französischen Barriques. Da im Dessertwein, wie in keinem anderen, die Sonne eingefangen wird, soll dies auch in seinem Namen zum Ausdruck kommen: Ulysses, einem Urahn der Familie von Gugelberg, wird ein ausgesprochen sonniges Gemüt nachgesagt. Degustation Typus: der Sonnige Süss, ohne klebrig zu sein, elegant, mit viel Frucht und beerigen Aromen, filigran und ohne alkoholische Schwere. Notes of dried plum, stewed berries and Amarena cherries on the nose. Also hints of Christmas spices and star anise. Beautiful, pleasant sweetness and ripe acidity on the palate. Lots of dark berry fruit, dried and cooked, as well as hints of lovage on the long finish.
