Vinifikation Carschluns Pinot Noir. Carschluns ist ein romanischer Flurname und bedeutet «zum Schloss gehörend». 1995 wurde diese Parzelle von Schloss Salenegg mit original französischen Burgunderreben bestockt. Das Besondere dieser Rebstöcke sind die kleinbeerigen Trauben mit entsprechend geringem Ertrag, dafür einzigartiger Aromatik. Für die Gärung werden maximal 10% dieses aussergewöhnlichen Traubengutes entrappt, 90% werden ungequetscht ganz, also mit dem Stielgerüst, in den Holzbottich, die Gärbütte, gegeben. Bei Halbzeit der Gärung werden die im Beereninneren gärenden Trauben mit den Füssen schonend vermaischt. Nach abgeschlossener Gärung wird der Jungwein ohne Pressung abgezogen und in französischen Barriques eingelagert. Der Holzeinsatz wird auf den Jahrgang abgestimmt und steht nicht im Vordergrund. Nach einem Jahr in den Barriques wird der Carschluns ohne vorgängige Filtration abgefüllt. Anschliessend reift er noch im Schlosskeller bis der Carschluns Pinot Noir bereit ist für die Auslieferung. Medium ruby-garnet colour. Cherry on the nose, with fresh herbal notes, some cassis and smoky hints. Soft on the palate with medium body and beautifully integrated, ripe acidity. Powerful, with fine-grained tannins and a medium finish of berries and savoury notes.
