Diese weisse Cuvée von Schloss Salenegg wird aus je 50% Chardonnay- und weiss gekelterten Pinot Noir-Trauben, dem Geschwisterpaar aus dem Burgund, gewonnen. Beide Trauben werden bei einem Zuckergehalt von etwa 90° Oechsle geerntet, was einen lebhaften, fruchtigen Wein mit sehr moderatem Alkoholgehalt ergibt. Die alkoholische Gärung findet bei kontrollierten tiefen Temperaturen von 15°C im Stahltank statt. Auf den biologischen Säureabbau wird ganz bewusst verzichtet, so bewahrt die Cuvée Blanche ihre betörende Frucht und Frische. Degustation Typus: Passepartout Die Nase zeigt viel Frucht mit feinen blumigen Noten, Banane und sogar etwas Maracuja. Im Gaumen ist die Cuvée Blanche wunderschön ausbalanciert, da Frucht und Säurestruktur perfekt aufeinander abgestimmt sind, was die Fruchtsüsse ohne jeglichen Restzucker voll zum Tragen bringt. Rich yellow. Opulent bouquet, aromas of fresh pineapple and mango, with sweet notes of baking spices such as vanilla and some saffron. Fine texture at the start, then a taut acidity that lingers until the end, wonderfully chalky structure.
