Weinbeschrieb Vinifikation Für diesen modernen und charakterstarken Blauburgunder werden die Trauben der besten Reblagen von Schloss Salenegg geerntet. Diese Rebberge gehörten schon zu Salenegg, als es noch im Besitz von Ritter Anton v. Molina war. Ritter Molina, Taufpate dieses Weines, residierte von 1594 - 1654 leibhaftig auf Schloss Salenegg, wo sein Geist, laut Bündner Sagenbuch, bis heute zuhause ist. Dank der rigorosen Ertragsbeschränkung sind die gewonnenen Trauben vollreif und hocharomatisch. Nur ein Teil der Trauben wird im Keller entrappt. Anschliessend wird das ganze Traubengut mit und ohne Stielgerüst im traditionellen offenen Holzbottich, der Gärbütte, spontan vergoren. Während der Gärung wird der Tresterhut dreimal täglich schonend von Hand unter den Saft gedrückt. Diese Art der Gärung mit Mazeration kann bis zu drei Wochen dauern, da keine Reinzuchthefe eingesetzt wird. Nach der Gärung wird der Molina in französische Barriques umgezogen. Very juicy fruit on the nose: red plum, sour cherry, some black pepper and coriander seed. Full-bodied palate, characterised by ripe, fine-grained tannins. The acidity is discreetly restrained, ending with a seductive, ethereal freshness.
